Dark chocolate bacon cupcakes

Cupcakes are probably the best thing ever. Bacon is probably also the best thing ever. In attempt to be awesome for a friend’s potluck over the holiday season, I started Googling ridiculous desserts. Thanks to allrecipes.com, I was presented with the awesome potential of the chocolate and bacon married together in cupcake form. My mind was blown.
I love baking, but I also respect the skill needed to create true masterpieces. Unlike cooking, baking requires exact measurements. Baking is a science, and as in regular science, you need exactly the right amount of everything.
It’s not like cooking, where you can just throw a bunch of shit in the pan and hopes it tantalizes your taste buds. This recipe is simple, but the results are complex enough to make anyone appear to be a master of the science of baking.
Ingredients
2 cups all-purpose flour
3/4 cup unsweetened
cocoa powder
2 cups white sugar
2 teaspoons baking soda
1 package of bacon
1 teaspoon baking powder
1/2 teaspoon sea salt
1 cup buttermilk
1 cup cold, strong, brewed coffee
1/2 cup vegetable oil
2 eggs
Instructions:
Preheat oven to 375 degrees F. Fry up that delicious bacon. Cook over medium-high heat until brown and crispy. Drain, crumble and set aside.
In a large bowl, stir together the flour, cocoa powder, sugar, baking soda, baking powder and salt.
Make a well in the center and pour in the eggs, coffee, buttermilk and oil. Stir just until blended. If you over-stir the mixture, they will not rise and be fluffy and awesome. It’s best to beat the eggs before adding them to the dry mixture.
Coat the bacon with a light dusting of flour. It helps the pieces not sink completely to the bottom of the cupcake. Mix in 3/4 of the bacon, reserving the rest for garnish. Spoon the batter into prepared cups, dividing evenly.
Bake in the preheated oven until the tops spring back when lightly pressed, which is around 20 minutes. Cool in the pan, on top of the stove (don’t melt your countertop, you might want that damage deposit back).
When cool, arrange the cupcakes on a serving platter, or whatever you’ve got kicking around. Frost with your favorite chocolate frosting and sprinkle reserved bacon crumbles on top.
